2023 – The Year of Margot

2023 was quite possibly one of the best years of my life because it brought me my sweet baby girl, Margot.

It’s been 4 months with her and it is 100% true that becoming a mother rocks your world.

She is so special to us and her story is one that I want to keep forever so let me start from the very beginning…

In August of 2022, Sean and I decided to start trying for baby #1 – we were excited and hopeful that within the next few months I would get pregnant, easy as that.

As you can imagine…it wasn’t that easy – I tracked my ovulation everyday in September and never received a positive test. In fact, I didn’t even have a period in September…or October and by November I knew something was not right.

As some of you know I have Hashimoto’s, which affects my thyroid and all of my hormones. If my thyroid levels are not within the correct ranges, it can make it challenging to 1. get pregnant and/or 2. sustain a pregnancy.

By November I knew that I needed to check in with the Dr. and get my levels checked. Of course upon doing so we discovered that my TSH level was extremely low, resulting in no ovulation/no periods and ding ding ding, meant I wasn’t going to get pregnant.

Thankfully, in December I was able to get my thyroid levels in check but again, no period and certainly no positive pregnancy test, despite our best efforts.

Now, this is where God majorly comes into play and once again confirms His hand in everything.

On January 9, 2023 I woke up with the strongest impression that I needed to take an ovulation test (now remember, I hadn’t even touched one since September). It seemed random but I took it and lo and behold, it was the 1st and only positive ovulation test I have ever received.

I’ll leave it to you to fill in what happened next…

Then, on January 21, 2023, after noticing a few nights of insomnia and odd moments of breathlessness, those magical two pink lines appeared and the journey began.

Those 9 months of pregnancy included about 10 weeks of nausea and extreme food aversions, a genetic testing scam, switching to a new (and wonderful) OB, finding out our little one was a girl (even though Sean and I both felt it from the beginning), deciding on the name Margot – which somehow came so naturally to Sean and I, we don’t even remember who suggested it first or where it came from, but fits our girl so well, and so much love for this little baby that we hadn’t even met yet.

I was grateful to have survived the 1st trimester, the 2nd flew by, and suddenly we were in the 3rd, painting a little pink nursery, gathering all the baby supplies, and watching as those tiny kicks turned into what felt like tidal wave sized body rolls. Honestly, looking back it felt like pure bliss. (Except for the pelvic pain at the end, where I quite literally thought I was going to crack in half every time I rolled over in bed…but somehow you forget about all of that).

As September rolled around all that was left to do was mentally prepare for labor and delivery (and for our lives to drastically change, of course).

At about 37.5 weeks, my OB was convinced that little girl was going to come any day, so of course, even after two membrane sweeps and a scheduled induction date set…she didn’t. My due date of October 2nd came and went and I accepted the fact that I would be induced two days later on the 4th.

But of course, Margot had other plans…she wanted to make it known from day one that she is the captain here.

On October 4th I woke up at 4am to a call from the hospital letting us know that we needed to come in at 6am instead of 5am due to a busy night of deliveries. However, after hanging up the phone, going to the bathroom, and climbing back into bed I started having contractions…real ones. In a matter of seconds it was made blatantly clear to me that all of the Braxton Hicks I had been experiencing were in fact NOT contractions and that this time I was indeed in actual labor. Oh, and the rule about waiting until they are 1 minute long and 5 minutes apart was automatically thrown out the window because they were coming every 3 minutes and those suckers were intense. So instead of waiting like we were told, we hopped in the car and made the 15 minute drive to the hospital, deep breathing and gripping the passenger side door the entire time.

By the time we arrived, they had a room ready for us (we were scheduled to be there 30 minutes later anyway). But instead of starting Pitocin, which I clearly no longer needed, they told me I was 4 centimeters dilated and said they would be back in a bit. By around 8am I had my epidural (the best $$$ I have ever spent), they had broken my water, and we were on our way.

Until a few hours later when they came in to check me again and saw that little girl had somehow managed to flip herself sunny side up…like I said, Margot (like most babies) likes to keep us on our toes. So for the next two hours, two nurses, Sean, and my mom flipped me from side and side and even onto my hands and knees (which as you can imagine is difficult, when you can’t feel your legs…bless them) until we had successfully turned that baby over and I had even dilated a few more centimeters.

Not long after my mid-labor yoga session, it was time to push and boy was I ready. I pushed for 2 hours, which felt like 10 minutes and was nothing like they show in movies. I was relaxed, feeling nothing (thank you epidural), and even chatting with Sean and the nurses in between pushes and catching my breath. Then, my angel of an OB came in (along with about 5 other people) and it was showtime. Within about 5 minutes and with two more pushes at 5:04 pm, our precious little girl arrived.

Margot McGetrick – 7lbs 9oz and 19.5 inches of pure joy, with the cutest little scrunchy nose and the prettiest, plumpest lips.

It was the most incredible thing I have EVER experienced in my life, truly a glimpse of heaven.

After a little bit of help due to a bit of swallowed meconium, it was time to cuddle my tiny sweetie all night long. It was magical. Those two days we spent in the hospital feel like a dream.

And then it was time to go home, now a family of three.

The day we came home, I remember sitting on our couch holding Margot, it was a gorgeous, sunny day, and it once again, felt like heaven. If there is one thing I know, it is that God stays close to new mamas and He sends angels to wrap them up, just as those mamas do for the precious babies that were so graciously and miraculously gifted to them.

And even after 4 months, I still get glimpses of heaven and I know that He is still with me, giving me strength after sleepless nights, patience amidst the tears, a surprising intuition, and the opportunity to understand what unconditional love feels like. Because even on the most challenging days, I still lay in bed looking at pictures of Margot, missing her, even though she is literally sleeping in her bassinet next to me. 

I could write an entirely separate post about motherhood, it is truly a joyful struggle.

Margot has changed my life. I still look at her and can’t believe that she came from me, that my body grew hers, and that I am her mom. She is my greatest gift and I cherish every second with her, even when it’s hard.

I am grateful everyday for my (overall) positive pregnancy and birth experience because I know that is not the case for everyone.

If you made it all the way to the end…bless you. I think I covered everything but mom brain is real and I probably forgot a few things. So for now, I’m gonna go snuggle my Margot and attempt to not lose a handful of hair…postpartum hair loss is rough and little girl has a tight grip (Nutrafol send help).

2022 – Yearly Review

Oh 2022, what a year. I would be lying if I said I wasn’t just a tiny bit happy that it’s over. 2022 was a year of major work and growth. It was busy and hard and happy and sad and a little bit chaotic, if you couldn’t already tell.

This year:

-I turned 25

-Sean turned 29

-I went to a Justin Bieber concert – seems silly but it was a dream and a much needed break from school

-I completed 3 out of 5 of my clinical practicums (essentially internships) for graduate school – hallelujah, truly

-We visited friends in San Antonio with a stop in Waco along the way (so fun), as well as a crazy flat tire with a miracle story in Austin on the journey home.

-Sean competed in a Spartan Race – he would say it was definitely a challenge, but a good one

-We celebrated 3 years of marriage!!

-WE BUILT A HOUSE – we moved in at the end of September and it still doesn’t seem real, definitely the biggest blessing of 2022.

-We moved to a new town (not far from the last, but hey, a move is a move!)

-Sent a little brother to Portugal on a mission for our church.

-Celebrated another little brother getting ENGAGED (to the most amazing girl that we love)!!

-We hosted Thanksgiving at our new house, so special to have my family visit us in Texas for the 1st time.

-Spent 2.5 fun filled weeks in Idaho with Sean’s family for Christmas.

We also ate lots of good food, tried tons of new restaurants, and made a few new friends who we already love! This year was a whirlwind, filled with extreme highs and extreme lows. Mentally and physically, this year was A LOT. But as cliche as it sounds, I am tremendously grateful for the trials and challenges because they motivated me to put in the work I needed to in order to grow and get back on track.

I am so unbelievably thankful for this new year and to continue working towards my goals. I feel more like myself than I have in quite a long time. This year will be filled with excitement just like the last. First, I GRADUATE (again) THIS YEAR!! I am so excited to receive my Masters in Speech Language Pathology and to continue working in a field that I love. We also get to travel back to Utah for my little brother’s wedding, which we are so excited for and hopefully, Sean and I will get another real (and much needed) vacation, only the 2nd in the almost 4 years that we have been married. We are still debating where to go and how we are going to beat our last vacation (a trip to Vegas in 2020), which was a total blast. Finally, and most importantly, we will be continuing to try for a precious little baby to join our family this year, something we have both been dreaming about and wanting a lot in 2022. We know God’s plan and timing are perfect so we are holding on to our faith that maybe 2023 will be our year.

More than anything, we are thankful for our relationships with God, our Savior Jesus Christ, and with each other. Our faith and our marriage are the most important things to us and we certainly worked hard for those relationships in 2022. Going into 2023, I am grateful that those two things remain our top priority.

I pray that 2023 can be a special and blessed year for each of you and that you can work towards any goals that you have set for yourself this year. I also hope that we are all able to give ourselves and others a little more grace, remembering that no one has it all together all the time. So many deal with the hardest of times behind closed doors. Be kind. Be like Jesus. Be forgiving and merciful and compassionate. If any of you ever need a listening ear, I’m always here!

-Discovery+ (I could name every show I love, but I’ll just tell you that The Lost Kitchen was probably my favorite and now I apparently need to plan a trip to Maine). If you need more recommendations just let me know, I’ve got a list. 

-Cookie Society: my new favorite cookie spot. You know I love a cookie and this place currently reigns supreme. 

-Haywire: Sean and I’s favorite restaurant that we tried last year, the food is unreal, super comforting, good quality (all sourced from right here in Texas), and delicious. 

-HEB: a Texas-based grocery store that finally made its way to North Dallas and we are obsessed. Our favorites are their tortillas (duh, if you know, you know), their Carolina BBQ sauce, and their frozen orange chicken. 

-New albums from Luke Combs and Taylor Swift – both amazing

-I also had 2 favorite songs that weren’t on either of those albums: Strangers (Maddie & Tae) and I’ll Be There (Foster)

-Where the Crawdads Sing – one of the best (and only) books I read last year. The movie is also phenomenal. 

-Last but not least, my Stanley cup – so basic I know, but very much worth it in my opinion.

2021 – Yearly Review

How is it already the end of another year??? I can’t believe 2021 is over and 2022 is already here!! 2021 was a big year for Sean and I…

It included…

-Getting accepted to the Master of Speech Language Pathology Program at ACU Dallas 

-My 24th birthday 

-A birthday stay at The Grand America in Salt Lake – dreamy, 10/10 recommend 

-My mom coming to visit at the end of March 

-Getting my wisdom teeth removed – ouch, 1/10 recommend 

-A trip to McCall, Idaho in May to attend Brady (Sean’s brother) & Ariel’s gorgeous wedding 

-Finishing my last school year as a Speech Language Technician

-Celebrating our 2nd wedding anniversary at Sundance

-A trip to Lagoon with the Crumbl Crew 

-Being a bridesmaid in one of my best friend’s weddings 

-Celebrating Sean’s Golden Birthday (28 on the 28th of July) 

-Purchasing our own washer and dryer – you know you’re adult when this makes the list 

-MOVING TO TEXAS 

-Visiting the Magnolia Silos – also dreamy, 10/10 recommend, especially the cupcakes 

-Welcoming my brother home (for the last time) from his mission 

-STARTING GRADUATE SCHOOL 

-A trip to the State Fair of Texas – an interesting experience to say the least 

-A fun visit from Sean’s parents that included a Luke Combs concert – amazing!

-Celebrating Thanksgiving, Christmas, and the New Year with my family in Florida 

-A cat fiasco – if you know, you know 

-Finishing my first semester of graduate school with a 4.0 – we’ll see how long that lasts 

This year included many leaps of faith, followed by tremendous blessings. Since moving to Texas we have made so many new and incredible friends, it’s seriously unreal how many amazing people we have met here. We have also been able to explore this amazing new place that we are excited and grateful to call home. There are so many fun places to go, lots to do, and restaurants galore, our favorite!!

I have also grown more than I could have ever imagined through my first semester of graduate school and I have met so many incredible women who will be forever friends. I thank God everyday for the opportunity to attend ACU Dallas, the calling to be an SLP, and for bringing us to Texas. My next semester will include my second practicum, this time in the Frisco ISD and I am both anxious and excited. Sean and I also have BIG plans for 2022, including a trip to New York City, potentially building/buying our first home, and beginning the process of starting our family!! 2022 is going to be busy (x1000000) and very exciting so stay tuned!! 

In retrospect, 2021, while exciting, also produced a lot of anxiety for me and more often than not, I felt very high strung and stressed the heck out, to be completely honest. Instagram is 100% my highlight reel and I keep all of the many imperfect parts of life to myself, so just know that you are not alone in your anxiety, fear, or whatever it may be. Those plagues are very much real for so many others who try to keep it hidden like I do. I think one of my words for 2022, despite the two major life changers (hopefully) coming our way this next year, will be ‘serenity’.  There were many, many times this year where I realized that I needed to just breathe, relax, and not get so worked up about things that didn’t matter. One of my goals for this next year is to remain calm and find peace, especially in troubling or stressful circumstances. I’m sure my husband will appreciate that one! 

I hope you all feel refreshed at the start of this new year, that you have made a few goals for yourself, and that if you have felt a little bit out of sorts or not yourself, like I have, that you are able to “return to your roots” and find what brings you joy and serenity.

A Texas Sized Update & Current Favorites

It feels like our life has been in overdrive since moving to Texas three months ago and I have not had the time or the energy to even think about writing anything other than the papers necessary for school. Finally, things have slowed down (or maybe I have finally caught up) enough to sit down and give a little bit of an update and of course, list a few of the things I have been loving in recent months. 

Sean and I are still absolutely loving Texas. We live about half an hour north of Dallas and we could not be happier with where we are right now. Life has been so busy with Sean’s new job, graduate school, and trying to explore our new area as much as we possibly can in our free time.  We feel so unbelievably blessed to be here and have truly seen God’s hand in our lives as He has opened doors we never could have anticipated upon our arrival here. They say everything is bigger in Texas and that must mean the blessings too. I’ve said it before, but it really is incredible how happy you can be when you know you are following the Lord’s plan for your life and can see His involvement in every moment. 

This is not to say that we have not had our fair share of growing pains. Moving is difficult for anyone, making new friends (especially as adults) is hard, and on top of that, these Texas roads are no joke. I think we get lost or argue about not knowing where to park about 50% of the time we try to go anywhere, but with time we will get more and more comfortable. We are so excited for all of the upcoming holidays and festivities and hopefully a “warm” winter without any snow!! 


Now, for the best part of this entire update – favorites!! You better believe that after almost four months of keeping track, I have the biggest list of all time, complete with some new Texas favorites as well. 

Places

Magnolia Silos & Magnolia Table (Waco) – Yes, I am that crazy lady that had to visit Magnolia the day after we moved to Texas. I was not disappointed, everything was picture perfect and just as dreamy as I could have imagined. My favorite things from our visit: the cupcakes (best I have ever had, not an exaggeration), the bathrobe I purchased, and the chicken salad croissant at Magnolia Table (also the best I have ever had). Will I be returning – 1000% 

The Dallas Farmers Market – Visiting the farmer’s market was the perfect fall activity. So many vendors and delicious food options, as well as every kind of pumpkin you could ever think of and plenty of Instagram-worthy spots.

NorthPark Center – This is hands down the nicest mall I have ever seen. It’s full of every designer store I can’t afford, but makes for some fun window shopping! 

Highland Park Village – Similar to NorthPark, this place is full of glitz and glam. Sean and I have only driven through this area once and I am already dying to go back. It is surrounded by the most incredible homes as well, if you love beautiful architecture like I do.

Legacy West – This area is much closer to us and while most of the stores here are still out of our price range, there is a Shake Shack and a Lululemon so we can still somewhat hang with this crowd.

Restaurants

The Original ChopShop – I think I could eat anything here and love it, the perfect healthy spot! 

Pizzeria Testa – Sean and I’s new favorite pizza place. Not only was the pizza amazing, but I’m pretty sure they have the comfiest chairs I have ever sat in at a restaurant. 

Howard Wang’s – Another new goto spot for us – the simplest but best Chinese we have found, perfect for a cozy, Friday night in.

Food & Drink

Trader Joe’s ABC Bars – I am late to the game on these chocolate almond butter bars, but they are addicting and I could eat the entire box at once. 

Salted Caramel Brownie Oreos – There are no words…if you can find them, buy them and eat them with a bowl of popcorn during a movie night.

Crumbl Chocolate Mallow Cupcake cookie – I basically survived off of Little Debbie/Hostess treats growing up so I was very excited for this cookie and it instantly turned into my new favorite when I ate the entire thing by myself. Don’t mind me dreaming about it until they bring it back. 

Honey Dijon Kettle Chips – I normally don’t even let myself buy snacks like this because I will eat them all at once, but I had to make an exception for these chips – they are insanely delicious and everyone needs to try them. 

Honey Mama’s Pumpkin Spice Cocoa Truffle Bar – This took me forever to find at Whole Foods and now that I have tried it, I will probably cry when I can’t get my hands on it again. It’s limited edition, so run. 

Entertainment

Music

Dan + Shay Good Things – This album could be your entire wedding playlist all in one. I will never not love Dan + Shay and this album is just so easy to listen and sing along to. 

LANY gg bb xx – This album is so unbelievably good. Sean and I are going to their concert here in Dallas on Thursday and like Dan + Shay, I have seen LANY multiple times already but am still so excited to see them again!!

Shows 

Making the Cut – Binged this show either right before or right after our move (I can’t remember at this point) and it is so fabulous. I’m a sucker for any kind of fashion/design show. 

Outer Banks (Season 3) – Nothing else needs to be said other than I loved it. 

Virgin River – This is another show that Sean and I binged every episode of and absolutely loved. Much like Outer Banks, it’s cheesy and dramatic but we couldn’t stop. 

Discovery+ – It should come as no surprise that I am obsessed with Discovery+ and all of the interior design, food, and travel shows available. If you need something to watch, my favorites so far have been: Magnolia Table with Joanna Gaines, Guy! Hawaiian Style, Bobby and Giada in Italy, and Cheap Old Houses.

Books

The Moment of Lift by Melinda Gates – Hands down the best book I have ever read, very educational and empowering. Definitely need to buy my own copy. 

Games 

Play Nine – Basically golf in card game form, super easy and fun to play, takes a little bit of strategy. 

I feel like even after all of that, I am probably still missing a few things! Sean and I are so excited to keep exploring and finding new favorites!! Next up: finishing my first semester of grad school and the holidays!!

3 Months of Favorites and a Life Update

How is it already June?! The past few months have been wild and fun and full of exciting events and of course lots of new favorites! 

Before I get to the favorites, I have some exciting news…

If you follow me on Instagram then you heard this news a couple of months ago, but Sean and I are moving to Texas!! I was accepted to Abilene Christian University’s Master of Speech Language Pathology program back in March so we are moving to Frisco this summer so that I can start at their Dallas campus in the fall. We are beyond excited and feel so blessed for this opportunity.  We’re getting closer to the motherland and my southern soul is jumping for joy! 

A few other things have happened in the past couple months, including my 24th birthday, my mom coming to visit, getting my wisdom teeth removed, finding a new apartment in TX, a weekend in McCall for my brother-in-law’s wedding, and my last day of work!! We’ve been busy and a little stressed to say the least, but that didn’t stop me from keeping a list of new favorites to share! 


Places to STAY

The Grand America Hotel – It has been a dream of mine to stay at The Grand America while we still lived in Utah, so for my birthday Sean and I stayed the weekend and boy was it magical. I had been to their spa and Sunday brunch a couple of times before so I knew I wasn’t going to be disappointed. Our room was absolutely beautiful, afternoon tea was a dream, and a little room service breakfast the next morning was such a treat. I 100% recommend if you are looking to spoil yourself or someone you love. 

Things to USE

Youth to the People Kale + Green Tea Spinach Vitamins Superfood Cleanser – Now I know that is quite a mouthful but this cleanser is amazing. It leaves my skin feeling clean and nourished and after only a couple of months it has evened out my skin tone, which is incredible. I know it’s pretty popular at the moment so if you can get your hands on it, you should. 

Weleda Skin Food Light Nourishing Cream – When I first heard about this moisturizer a couple of years ago from various makeup artists and skincare gurus that I follow I assumed it was just more luxury (expensive) skin care. Then, a few weeks ago when we were in Idaho, my sister-in-law Kalie had it and told me that it was sold at Target and super affordable. I was shocked and you better believe I ran to Target the minute we were back in town to get some for myself. She let me try her original version that is thick and perfect for dry climates, like here in Utah. I ended up purchasing the light version since we are moving to Texas and it is just as amazing as the original. Both smell amazing, are smooth and creamy, and leave your skin feeling ridiculously hydrated. For $18 it really can’t be beat, definitely a new staple in my skincare routine. 

Tula Sunscreen – Another new staple in my routine is this sunscreen. Similar to the moisturizer I mentioned above, this sunscreen is insanely smooth and moisturizing and gives you the most beautiful glow, while still providing you with great sun protection. 

Things to WATCH

Cruella – Sean and I just saw this in theaters a couple of days ago and I absolutely loved it. It was wildly entertaining, the cast is phenomenal, and the fashion is unmatched. I would definitely recommend seeing it, either in theaters or on Disney+ for a fee. 

A Quiet Place 2 – Sean was over the moon excited to see this movie and being the good wife that I am, I tagged along so that he didn’t have to go alone. I was 100% terrified the entire time so if that’s your kind of movie, you will love it. All jokes aside, it was very well done and the cast is fantastic, it certainly deserves all of the praise it is getting. 

Things to READ

Everybody Always & Dream Big by Bob Goff – I loved both of these books. I think Bob Goff is incredible. All I can say is go to your local library and check these out for yourself. If you like uplifting, Christian based, self-help style books you will probably like these. 

Things to EAT/DRINK

Olipop Prebiotic Soda – I am not a big soda drinker, never have been, but occasionally when Sean and I go out to eat I will treat myself. When I was finally able to get my hands on these “healthier” sodas, I was hooked. I recommend the Orange and Root Beer, but I am dying to try their new Orange Cream flavor!

Honey Mama’s – This is essentially a paleo chocolate company and let me tell you, their bars are insanely delicious. My favorites are the Original Dutch, Coconut, and Oregon Mint. They are a little pricey and sometimes hard to find, but if you can find them, grab yourself a couple, keep them in the fridge, and enjoy when you want a non-guilty treat.

Sweet Loren’s – Another new, cleaner treat option are these cookies. Similar to the Honey Mama’s chocolate bars, these cookies are gluten free and dairy free and they are delicious. They are also plant-based and do not include eggs so you can eat the cookie dough!

Crumbl Kentucky Butter Cake Cookie – Finally, the last and least healthy new treat favorite is Crumbl’s new Butter Cake cookie. Sean has worked for Crumbl for close to two years now and to be honest, we don’t eat too many cookies these days. However, Sean brought a sample of this cookie home for me to try about a month ago and I fell in love. It instantly became my new favorite. When it was finally released to the public last week we ended up buying four of them…I am both sad and relieved that it will only appear a few times a year, otherwise I might be in trouble. Next time it is part of the weekly roundup you have to give it a try.

Comfy Casseroles

I turned 24 and now I post about casseroles…but in all seriousness, if you are like me, then you like to cook, but maybe not every single day. This is where a good casserole comes in handy because I can make it at the beginning of the week and have lunch and dinner handled for a few days. Here are two of my new recent favorites that are both easy and delicious and if you make them at the same time and eat them together, it almost feels like Thanksgiving dinner

Chicken and Green Bean Casserole 

This recipe is from lilluna.com – found on Pinterest and tweaked a bit.

Ingredients: 

  1. 6 oz. chicken stuffing mix 
  2. 1 tablespoon butter
  3. 2-3 large chicken breasts (cut into bite sized pieces) 
  4. 3-4 cups of fresh string beans (washed with the ends trimmed)
  5. ¼ cup of flour
  6. 1 ¾ cups chicken broth 
  7. 5 oz of cream cheese (cubed) 

*Chicken and green bean amounts can be altered according to your preference. 

Directions:

  1. Preheat the oven to 400 degrees. 
  2. Prepare stuffing according to directions on the box.
  3. Cut chicken into bite sized pieces.
  4. Melt butter in a skillet, add chicken, season with salt and pepper and cook until chicken is cooked through.
  5. Spray a 13×9 casserole dish with non-stick cooking spray and add cooked chicken.
  6. Once chicken has been removed from the skillet, add the green beans, season with salt and pepper, and cook for 5-10 minutes, until tender.
  7. Sprinkle with flour, stir, and cook for another minute.
  8. Stir in the chicken broth and simmer. Then add cream cheese and stir until melted. (This step comes together very quickly)
  9. Once all ingredients are fully incorporated, pour the mixture over the chicken in the casserole dish. 
  10. Top with prepared stuffing mix. 
  11. Bake for approximately 30 minutes or under bubbling and heated through. 

Corn Casserole 

This is Joanna Gaines’ recipe from her Magnolia Table cookbook – also called Creamed Corn Spoonbread. Unbelievably easy and so good if you are a corn fiend like I am. 

Ingredients: 

  1. 1 stick of butter (8 tablespoons)
  2. 1 15 oz can of cream style corn 
  3. 1 15 oz can of sweet corn (drained)
  4. 1 cup of sour cream 
  5. 2 large eggs (beaten)
  6. 2 tablespoons of sugar 
  7. ½ teaspoon of salt 
  8. 1 8 oz. box of Jiffy cornbread mix

Directions:

  1. Preheat the oven to 350 degrees.
  2. Spray a 13×9 casserole dish with non-stick cooking spray.
  3. Melt the butter and add to a large bowl with creamed corn, drained sweet corn, sour cream, eggs, sugar, and salt. Mix.
  4. Add the dry Jiffy mix and stir until completely incorporated.
  5. Pour into the prepared dish and bake for 30 minutes. 

*It will look undercooked, it will be soft, but the edges should be browned and a knife should still come out clean in the center. 


Both casseroles can be covered and stored in the fridge for many days. They also heat up beautifully in the microwave for a quick lunch or dinner.

New Beauty Favorites

I can’t believe it has been almost a year since my first post on this site. Coincidentally, one of my first posts was beauty/makeup related and of course, I have new, updated products that I have to share. 

  1. L’Oreal Paris Voluminous Lash Paradise Mascara: This is the same brand as the mascara that I shared a year ago and it is good. It gives a much more dramatic and full effect than the more natural mascara I shared last year. My eyelashes are naturally pretty long but this mascara makes them look even longer and fuller, which I love. Great dupe for a popular Too Faced mascara, but half the price…we love that!
  2. L’Oreal Paris Infallible Super Slim Liner: This is a surprising one for me because I never thought I would ever be able to use liquid eyeliner. I typically stick with gel liners that are easier to apply, but for some reason I picked this one up and I love it. It definitely takes practice and I still mess it up half the time, but I love the felt tip and that I can now amp up my eye look with a little wing. 
  3. Laneige Lip Glowy Balm: I’m addicted to the Laneige Lip Sleeping Mask that I mentioned last year, so I had to try the new Lip Glowy Balm. It is essentially the same as the mask but it is more practical for on-the-go because the tube makes it easier to apply. 
  4. Sephora Collection Best Skin Ever Foundation: This new foundation from Sephora has been circulating the internet so I had to see what the hype was all about. I can confirm…it is amazing. Light but buildable coverage, super dewy, it blends seamlessly into the skin, and lasts all day, and for $20 you cannot beat it. They say to use a brush or your fingers to apply, but I have gotten the best result with a sponge.
  5. Kirkland Signature (Costco) Moisture Shampoo & Conditioner – This shampoo and conditioner blew me away. It is a Pureology dupe but for the price and size of Costco. I ran out of the shampoo and they haven’t restocked at my location, so if you can get your hands on it consider yourself lucky. You can also order it from the Costco website if you are desperate to try it, I am tempted. In the meantime, I have also been using the OGX Teatree Mint Extra Strength Refreshing Scalp shampoo which is a mouthful but also another amazing option! My hair seriously looks and feels like I just came from the salon every time I wash it. 

An honorable mention would have to go to Tula Skincare – I am still trying out the cleanser, moisturizer, and sunscreen so I will report back once I have a reliable opinion.

2021 – February Favorites

February flew by and to be completely honest, it was not very eventful. However, I do still have a few excellent and very practical favorites to share with you!

Things to USE

Conair Rechargeable Fabric Shaver – We have had our big, comfy Costco couch for almost two years now and we are still absolutely in love with it. But, a few months ago, Sean and I started to notice that a few of the more loved areas were beginning to look worn and pill/fuzz a bit. I ordered this fabric shaver on Amazon and within half an hour our couch honestly looked brand new. You can also use it on sweaters and other clothing and for $30 it’s a steal. You do have to empty it frequently because it’s a small handheld device but I highly recommend it. 

Dave Ramsey Smart Tax Service – If you know me, you know I love Dave Ramsey. I don’t practice everything he preaches but I trust the guy to guide me on my financial journey. This year for our taxes, Sean and I decided to use Dave’s Smart Tax service instead of TurboTax or H&R Block, both of which I have used in the past. Hands down, Dave’s takes the cake for the most thorough, yet simplest and most straightforward online filing platform. It really was quick, easy, and as painless as paying your taxes can be.

Grocery Pickup – This is a service I have tried in the past but just recently used again, and I must say, it just makes getting groceries so dang easy. Here in Utah we have a Kroger chain called Smith’s, so I use their app to order. Grocery shopping this way helps me stay within my budget and makes sure that I only buy things we really need and that coincide with our meal plan for the week. I can see exactly how much my total will be before I buy anything, which I love. They also send you a link via text so that you can let them know when you are on your way and when you have arrived at the store. They bring everything straight to your car, put it in your trunk, and you don’t even have to leave the comfort of your heated seat. Smith’s pickup service is also free if you spend over $35. Amazing!

Capital Gaines: Chip Gaines – I loved this book. You already know that I basically idolize Joanna and have already read her book, so I had to read Chip’s first book before his new one is released (mid-March I believe). He is a fantastic storyteller and this book was both entertaining and inspiring (but not in a cheesy way). I definitely recommend if you are looking for a simple but interesting read. 

Things to LISTEN TO

Life Rolls On: Florida Georgia Line – More amazing country music, wahoo!! Sean and I saw FGL with Dan + Shay and Morgan Wallen in concert almost 2 years ago and they are fantastic – fun, down home guys with great music. A couple of our favorites from the new album are Long Time Comin’, Long Live, Countryside, and New Truck. Give it a listen if you haven’t already!

Things to WATCH

On Pointe (Disney+) – Amazing series that documents the life of the youth ballerinas at the School of American Ballet as they prepare for the annual Nutcracker performance. It shows dancers of all ages, all beautiful and full of talent – definitely makes me want to improve my posture and be a bit more graceful…

WandaVision (Disney+) – INCREDIBLE show, one of the best I have seen in a long time, everyone needs to watch it and that’s all I’m going to say. Plus, Elizabeth Olsen is gorgeous (did anyone else not realize that she is the Olsen twin’s younger sister or was it just me who was about 5 years behind?) 

Good Mythical Morning (Youtube) – Sean and I just discovered this Youtube channel and it’s wholesome and great. We love their food tasting/rating videos. Who doesn’t want to watch two hilarious, southern guys try every flavor of Poptart?

Things to WEAR:

Lululemon Wunder Train HR Leggings – I purchased my first pair of Lulu leggings in January and I am converted. I know that the Align leggings are the most popular due to their extreme comfort level, however, I wanted a pair that was a little more versatile, that I could workout in and also wear to lunch with boots and a sweater. These Wunder Trains are just that. They are made from a more athletic fabric, thick but not heavy, they don’t slip and slide, and are very flattering – that’s the definition of perfect in my book. I’m in love with them.

Steve Madden Trap Chelsea Boots in Cognac – Another absolute favorite is the new pair of boots that I purchased. I mentioned on my Instagram story that I have been wearing the same pair of black boots since at least 2017. It was time for an upgrade and these Steve Madden boots are both stunning and comfy, everything I need. Unfortunately, I believe these are sold out online, but if you happen to find a pair, treat yourself.

Headbands & Scrunchies – If you know me, you know that I am not a hair gal…I don’t do anything to my hair on a day to day basis other than run a brush through it or pull it up in a messy bun. I have been experimenting with curling it but that’s still a work in progress. However, I have found a couple of easy accessories that I can throw on to elevate my look a bit. The first is scrunchies. I have been using big, thick, 80’s style scrunchies for a couple of years, however, I recently found a pack of smaller, thinner ones in cute colors that are a little more acceptable to wear out in public without looking like I belong on the set of Saved by the Bell. Next, headbands…like 1st grade school picture headbands. I’ve seen the big, cute headbands with knots and patterns…those aren’t my jam, most make my head look ginormous. However, at Target I found a 2 pack of thin, basic headbands in black and cream and they’re perfect. They add a little, classy touch to any outfit or as my teen brother told me, they make you look 12 years old…thank you Blake, I’m still going to wear the headband.

Things to READ:

The Ride of a Lifetime: Robert Iger – I love the Walt Disney Company. I love Disney World. I love the joyous, creative, family-oriented Disney culture. I also loved this book, written by former Disney CEO, Bob Iger. I think it takes a special person to be responsible for all of that Disney magic. If I could have lunch with Bob Iger I absolutely would, read this book and see if you would like to join that theoretical lunch date as well.

Whiskey in a Teacup: Reese Witherspoon – I already talked about this book on my Instagram story, but I had to include it here also. This book makes you proud to be from the south (and if you unfortunately are not a born and raised southern gal, this book will make you wish you were). It is full of great southern recipes, proper etiquette and hospitality tips, lingo, and relatable stories. I loved every minute spent reading this book. Thank you Reese!!

Things to DRINK: 

Starbucks Hot Chocolate with Toffee Nut Syrup & Caramel Drizzle – This is probably my favorite item on this entire list. This is the most delicious drink I have ever had…no exaggeration. I also tried it with coconut milk for a non-dairy option and it tastes exactly the same minus the unfortunate dairy side effects. If you do anything other than read this post today, please go try this drink. 

Things to LISTEN TO:

Dangerous: Morgan Wallen – This album is great. We aren’t getting political here, all I have to say is listen to this album if you love authentic, country music. 

Places to GO:

The Library – I know this is a pretty random way to end the list, but it is a very real favorite for me. Sean and I got library cards at the beginning of the year and I love it. We have the cutest little library and I have a long list of books I want to read that I don’t want to pay for, enough said, visit your local library.

2020 – Yearly Review

2020. A year that literally rocked the entire world. When I started this website in March of this year I knew that I would want to include yearly reviews, however, I never expected that the first one would be quite this eventful. 

2020 included…

-My 23rd birthday 

-Welcoming my brother home from his mission in Madagascar

-Sending that same brother off again to serve in the Iowa City, Iowa mission

-Celebrating our 1st wedding anniversary

-An anniversary trip to Zion and Las Vegas

-A trip to Florida to visit my family

-Sean’s 27th birthday

-The SLC Parade of Homes 

-Finishing my 1st school year as an SLT & beginning my 2nd

-Apple picking 

-Pumpkin picking 

-Thanksgiving and Christmas in Idaho with Sean’s family

-Trying lots of new recipes, baking lots of yummy treats

-Trying many new restaurants 

-Time spent with friends at the Midway Ice Castles, Sundance’s Car Cafe & Halloween Lift, TopGolf, mini golf, and lots of dinner dates

-Watching a lot of new shows and movies from the comfort of our couch

-Taking the GRE and applying to graduate schools

-Testing positive for COVID but thankfully, making a full recovery

That list is full of all of the fun, positive events from this year, of which I am so incredibly grateful. However, I am definitely not ignorant to the many, many hardships that we all faced this year. From the uncertainty and fear of a worldwide pandemic, lockdowns and quarantines, political strife and conflict, social injustices, economic/financial struggles, and many, many more personal trials that I’m sure I am missing – 2020 was HARD. But, I think despite all of the tribulation of the year, we all became more aware, more compassionate, more involved, and in a way, more connected, despite the social distancing. On a global level, we were able to understand one another just a little bit better, since the pandemic affected all of us in (relatively) the same ways. 

The two words I picked for myself at the beginning of 2020 were Present & Intentional. Little did I know that the events of the year would allow for a lot of time to reflect, be present, and make more intentional decisions. To dig deep within myself, to dig deeper in my relationships, and to truly cherish the time spent with others. 2020 may have been difficult, but I still feel extremely blessed and just thankful.

The start of a new year always brings hope. It is a time to set new goals, align our priorities, and widen our perspectives. It is a time where I feel the most motivated to make changes and improve myself. 2021 may still be hard, but just like in 2020, there will be good in it, we just have to look for it and be grateful when we find it.  I pray that all of you may start this new year feeling refreshed and renewed, despite any challenges you may be facing. There is always much to be grateful for. Find the joy in the journey, be intentional, be present. As we have learned this year, life is too short and precious to take anything for granted.
